Il 25 maggio 2022, nel corso della cerimonia che si è svolta a Tallinn, MICHELIN ha annunciato la prima guida dell’Estonia, che diventa così il primo paese del Baltico a ricevere questo riconoscimento. La guida ha segnalato 31 ristoranti, due dei quali hanno ricevuto una Stella MICHELIN.

I ristoranti premiati con una stella sono NOA Chef’s Hall e 180° by Matthias Diether. Il NOA Chef’s Hall utilizza una miscela dei migliori ingredienti del mondo fondendoli con prodotti locali. Il menu creativo di sette portate, ideato dagli chef Roman Sidorov e Tõnis Siigur, coinvolge gli ospiti in ogni istante, con piatti complessi e originali che sono ricchi di sapori complementari e strati di consistenza.

180° by Matthias Diether si trova nel moderno quartiere portuale di Tallinn, Noblessner, ai margini del centro storico. Il ristorante prende il nome dalla vista a 180° che si gode dalla sua cucina a vista a forma di “U”. Lo Chef Matthias Diether si distingue per le sue creazioni moderne, che offrono una serie di contrasti di sapore e consistenza, oltre a prestare grande attenzione ai dettagli.

Due ristoranti sono stati premiati con la Stella Verde MICHELIN per il loro impegno sostenibile nella gastronomia: Põhjaka Manor a Mäeküla e Fotografiska a Tallinn. Che si tratti di un approccio ai prodotti chilometro zero, di sforzi per ridurre l’impatto ecologico del ristorante, di iniziative volte a riciclare i rifiuti alimentari, di coltivare le proprie verdure ed erbe aromatiche o di stimolare i propri ospiti ad accogliere una visione più eco-responsabile della gastronomia, questi ristoranti sono una vera e propria fonte di ispirazione per buongustai e ristoratori.

La cucina estone è stata influenzata dal suo paesaggio. Con le foreste che dominano la geografia dell’Estonia, molti Chef si ispirano a ciò che cresce, utilizzando i prodotti locali nei loro menu. Dall’inizio del mese di luglio alla fine di ottobre, le foreste sono ricolme di funghi, noci, erbe e bacche che si trovano a loro volta nei menu di tutto il paese.

Una nuova generazione di Chef estoni sta facendo da pioniere in una scena gastronomica emergente, trasformando i prodotti raccolti in una cucina innovativa e moderna. Gli Chef utilizzano tecniche secolari e ingredienti tradizionali di stagione, unitamente a metodi europei contemporanei, per creare una cucina fusion.

Situata all’interno del Golfo della Finlandia, nel cuore dei Paesi Baltici, l’Estonia è un punto d’incontro culturale tra Scandinavia, Europa centrale e orientale. La diversità del paesaggio estone, tra cui la capitale Tallinn, patrimonio mondiale dell’UNESCO, le sue foreste e paludi, le 2.222 isole, i 3.800 km di costa e i numerosi laghi, hanno contribuito a plasmare la fiorente scena culinaria. Il gusto per la diversità, i prodotti artigianali e gli ingredienti locali esercitano un’influenza particolare sulla cucina estone e sui suoi giovani chef ambiziosi.
